Emma’s: my espresso roast of choice
I gauge the quality of my espresso beans partly by sniffing the used puck in the portafilter right after extraction. There is no hint of burn, or of acid, or alkali. It’s pure “chocolate” and earth notes, which is what I prize and hope for every day. Thanks Birch!
